S. Suzanne Nielsen received her master's degree (1979) and Ph.D. (1982) from the University of Minnesota in Food, Science and Nutrition. She is recognized internationally for landmark research in food chemistry; particularly in the chemistry and nutritional properties of legume proteins. She is known nationally and internationally for her teaching of food science, especially in food analysis, for which she has edited the definitive textbook. She is a dedicated teacher who hold awards for outstanding teaching and receives high evaluations from her students. She currently is a Professor in the Department of Food Science at Purdue University.
